VEGETARIAN BAKED PASTA: A VERY ITALIAN DELIGHT

Even if you do not eat meat you do not have to renounce to fanciful recipes such as baked pie and pasticcio but simply vary the ingredients.

INGREDIENTS:

Conchiglioni pasta: 500 g

Tomato sauce: 1 liter

Seitan (optional): 1 pack

Onion: 1

Carrot: 1

Grana padano cheese: 250 g

Spicy provola: 200 g

Basil

Mozzarella: 150g

 

FOR THE BESCIAMELLA SAUCE:

Butter 30 g

whole milk 250 ml

flour 30 gr

salt

 

LET’S COOK!

Cook the pasta and drain it.

Prepare the tomato sauce. In a pan put a chopped onion and 1 carrot with a little bit of oil. After 5 minutes add the tomato sauce, salt, pepper and basil. Cook it for 30 minutes and if is too dry add water. 

 

If you like you can also add the seitan in the tomato sauce.  Cut into small pieces.

 

Prepare the béchamel sauce.

Slowly melt the butter and add the salt first and then the flour. Stir quickly until you get a mixture.

Now add the milk  without making lumps and always mix with the whisk until it thickens.

Sauté the pasta in the tomato sauce and start to compose the layers of your pasticciata pasta.

 

On the bottom put a layer of pasta, cover with Parmesan, add pieces of  mozzarella and provola and cover with bechamel. Continue the layers until you have finished the pan and complete with plenty of Grana cheese that raises the crispy crust in the oven.

Now in oven at 200 degrees for 20 minutes.
