vegetarian eggplant rolls with soft cheese cheese

Are you looking for a light and fresh starter perfect for this summer? The cold rolls of aubergines and stracchino will be a perfect start for your dinner with friends.

INTRO

It’s already hot, very hot even here in Friuli Venezia Giulia.

Cooking seems to me a more than epic enterprise and we, young women who do not like to cook too much find every subterfuge to get out great and very quickly.

I had some fried eggplant in the fridge (very italian clique) and I decide to make this cold rolls.

 

LET’S GO!

Cut the eggplants in slices and fry it in hot oil. 

When the egglant is cold fill it with stracchino cheese or a very soft cheese. If you are not vegetarian you can add some ham.

 

If you like strong flavors you can add taggiasca olives, dried tomatoes, rocket, speck. In short, you have a great choice!

 

After having rolled them up well,  laid the rolls on both sides above the mix of seeds you have chosen, I preferred those of linen and chia.

When they are well covered put the rolls in circle in a plate and your VEG starter is ready.

 

CURRY POTATOES

To prepare the curry potatoes there are various recipes.

Some more light like this and others less like the one with the addition of yogurt sauce, tastier and caloric.

In this case, to prepare the curry potatoes I cut them into cubes and put them in the pressure cooker for 8 minutes.

When they were ready I sautéed them in oil, this way they will become more crispy pouring over the spicy curry (which I love to go crazy).

At the end you will have potatoes not too caloric and very tasty that will give a different touch to the usual potatoes that we put at the center of the table.

 

AT THE END

Add a big green salad with tomatoes, corn and cucumber and your cold healthy lunch is ready guys!
