3 perfect vegetarian quiche for your autumn

Quiche at my house is the classic save dinner.

 

QUICHE WITH STRACCHINO CREAMY FRESH CHEESE AND ROSEMARY

 

 

 

INTRODUCTION

I love love love the soft cheese.

I know it’s not a great premise, but it is true … I am a cheese lover. It’s so hard to become vegan in this life.

However the highlight of this veggie quiche is that it is very little to prepare and is delicious.

RECIPE

Place the puff pastry on the baking tray, create a nice thick edge and pinch the fork on the bottom.

Put the soft cheese in small pieces on the bottom, chopped the rosemary very finely and sprinkle over the quiche.

Cook it in the oven for 30 minutes at 180 degrees.

 

 

 

 

 

QUICHE WITH BEETROOT, RICOTTA CHEESE AND SMOKED SCAMORZA

 

In my fridge the beetles are never missing. They have a very long deadline and you can put them in some kind of gnocchi, bread, rice or soup.

This is a really delicious recipe, fast to prepare and very nice to see at the table.

RECIPE

Roll out puff pastry and holes in the bottom with a fork. Lay the ricotta on the bottom with a bit of pepper, oil and thyme. Grate over the scamorza distributing it well. Cut the beetroot (I buy those already cooked from the fridge counter) and arrange them to create a beautiful design.

30-35 minutes at 180 degrees.

LEEK AND POTATO QUICHE

This recipe is a bit longer than the others because you have to cook a potato and leek but the result is amazing. If you prepare a little more you can use them to make an omelet, soups or rosti, a famous Swiss dish.

RECIPE:

Cut the potatoes into small cubes, sliced the leek and cook for 20 minutes in a frying pan with a little oil.

Combine in a bowl the potatoes and grilled leeks, eggs, Parmesan cheese, salt, pepper and parsley.

Pour the puff pastry into a frying pan and fill it with the mixture.

Cook it in the oven at 35-40 minutes for 180 degrees.
